WINE

The historic grapes of this old grape variety require great respect, with a very delicate de-stemming, in order to keep the highest possible quantity of grapes intact. At a temperature of 29 - 30 ° C the must completes its alcoholic fermentation on the skins for about 20 days.
This is how an elegant, long-lived wine of great complexity is born, which needs to be refined in the bottle for at least a year.
